Immediately after fermentation of the partially dried Amarone grapes, the finest selection of Valpolicella is repassed, starting off a second alcoholic fermentation. The alcohol content rises and the wine acquires a richer colour with greater extracts and fragrances. After ageing in the bottle for 6 months, this wine becomes extremely long, plush and velvety, with intense fragrances of red fruits.
