Aged for over a quarter of a century in handmade wooden barrels, Fernando Pensato Aceto Balsamico Tradizionale is a Modenese delicacy. The unmistakable flavor, color, and texture derives from the high quality must obtained from the local Trebbiano grapes and years of aging in barrels made of various types of wood: chestnut, cherry, oak, walnut. Late harvesting ensures riper grapes with a higher sugar content which are gently crushed to prevent the skins and marc from releasing substances that may hinder the acetification process. The must obtained is then heated to eliminate part of the water and placed in wooden barrels where the magic takes place.

We suggest using several drops of Tradizionale to finish a risotto dish or accompany chunks of aged Parmigiano Reggiano cheese. Whether used by the drop to accent a plate or served at the end of a meal by the teaspoon, Fernando Pensato Aceto Balsamico Tradizionale should always be used sparingly due to its limited annual production.
