The heated platens help the dough flatten faster and easier, and they can also be used heat off for cold pressing. Both heat platens are optional Xylan coated for a non stick surface that is easy to clean. (shown with optional non stick xylan coating) The clam shell design allows for easy loading and unloading of dough. Temperature control can be set from off up to 450F. The heat
