From the Kyoto Prefecture, this aged Shoyu is traditionally brewed using the mushiro koji process and then aged in Japanese whiskey barrels made from mizunara hard wood. The shoyu has a delicate flavor with a sweet undertone and pungent aroma. While great to cook with, we like to use the shoyu as a condiment to bring out it more subtle flavors.
